Heat in a Home Oven
Your oven's dial is a suggestion, its air is a poor conductor, and the shelf position matters more than the number. What actually transfers heat to food.

An oven does not have “a temperature”. It has a thermostat with a swing of ±15 °C, a hot patch near the element, and three different mechanisms moving heat into your food at different rates.
The three mechanisms
Convection — hot air moving across the surface. Air has very low heat capacity, so this is the weakest of the three unless a fan is forcing it. This is why you can put your hand in a 200 °C oven for a moment and not be hurt, but cannot touch the shelf.
Radiation — infrared from the element and the oven walls. Stronger than most people expect, and it falls off with distance, which is why the side of a tray facing the element browns first and why grilling is a distance game.
Conduction — direct contact with the tray. By far the most efficient of the three, which is why the underside of anything on a preheated dark metal tray cooks fastest.
Most oven problems are a mismatch between which of these you needed and which you got.
Practical consequences
- Preheat longer than the beep. The indicator tracks air temperature; the walls and shelves take another ten to fifteen minutes to catch up, and they supply the radiation. A pizza into a “preheated” oven at the beep goes onto a cold shelf.
- Position is a real variable. Top shelf browns tops, bottom shelf browns bases. Bread bases and roast potatoes want low; gratins and anything you want blistered want high.
- Fan settings are worth about 20 °C. Forced convection transfers heat far faster, so drop the temperature by roughly 20 °C when converting a conventional recipe — and expect drier surfaces, which is good for roasting and bad for custards.
- Dark, thin trays run hotter than shiny, thick ones. Same oven, same shelf, different results. If your biscuits burn underneath, it may be the tray rather than the oven.
- Buy a £10 oven thermometer. Most domestic ovens are 10–20 °C off, and yours being off consistently is fine — as long as you know which way.
The one that catches everyone
Opening the door costs you far less than you think, and far more than the manual admits. The air temperature drops immediately — but air was never doing most of the work, and it recovers in under a minute. What you actually lose is steam, which matters enormously for bread in the first ten minutes and almost not at all after that. So: do not open the door early on bread, and stop worrying about it for a roast.
