Why the noodles are dressed alone

Dangmyeon are pure sweet potato starch. Straight from the pot they are hot, porous and still absorbing, and soy sauce poured on at that moment travels into the strand rather than clinging to it — which is why properly made japchae is seasoned all the way through and never tastes like noodles with sauce on top. Wait until they cool and the starch retrogrades: the surface tightens, the noodles stop drinking, and no amount of extra dressing fixes it.

Notes

  • Cut the boiled noodles with scissors. Full-length strands are impossible to toss evenly and worse to eat.
  • Japchae is at its best barely warm or at room temperature, which makes it a genuinely good make-ahead dish for a table of other things.
  • Traditional versions often include beef strips and a shredded egg garnish. Neither is needed; the mushrooms carry the savoury side.
