Frozen peas are the right choice

Peas begin converting sugar to starch within hours of picking, and commercial freezing happens faster than any supermarket supply chain can deliver fresh ones. Frozen peas are usually sweeter than “fresh” peas that have spent three days in transit — and they need eight minutes, not twenty.

Notes

  • Add the peas from frozen, straight into the gravy.
  • Paneer for five minutes only. It has nothing to gain from longer and plenty to lose.
  • Garam masala at the end, off the heat. It is an aromatic finish, not a cooking spice.
