Why the ragù must be dry

Lentils hold their shape and never thicken a sauce the way minced meat and its fat do, so a vegetarian moussaka carries far more free liquid than the original. That water has nowhere to escape once the béchamel caps it, and it turns the aubergine layers to sludge. Reduce the ragù until a spoon leaves a clear trail and the problem disappears. The yolks in the topping matter for the same practical reason as in a custard tart — extra protein and fat make it set firmly and colour under dry heat.

Notes

  • Cinnamon, allspice and oregano are the flavours that read as moussaka. Without them it is just aubergine lasagne.
  • Assemble a day ahead. It slices far more cleanly on the second day.
  • Salt the aubergine before roasting, not to draw out bitterness but because seasoning it later never penetrates.

Try butter, 30 minutes, braise, or an ingredient you need to use up.
