Layers, and why the syrup is not optional

Babka is a laminated loaf built the lazy way — instead of folding butter into dough, you roll a filling in and twist. The cut faces expose those spirals so they set proud during the bake rather than sealing shut. Butter in the filling matters as much as the chocolate, since cocoa solids alone would bake dry and powdery. The finishing syrup replaces the water driven off in a long bake at a high sugar load, which is the only thing keeping an enriched, twisted loaf from going stale by the next morning.

Notes

  • The dough must be properly cold to roll. Warm, it tears and the filling bleeds through.
  • Weigh the tin down with a second tin for the first ten minutes if you want a flatter top.
  • It is better on day two, once the syrup has redistributed evenly.
